Preheat oven to 400 degree Fahrenheit. On a large baking sheet line the sliced baguette in rows and drizzle with olive oil. Place in oven and allow to crisp up (approx. 5-8 minutes).
Remove from oven and rub each slice with a garlic clove (should take two cloves for the whole loaf).
In a medium mixing bowl, add 2 tablespoons of olive oil, diced tomatoes, minced basil and mix. Add salt and pepper to taste and set in fridge until ready to serve.
Spoon mixture onto toasted baguette and serve. For some extra goodness, grate some parmesan over top. YUM!
