In a medium mixing bowl add flour, sugar, baking powder, salt, poppy seed and lemon zest; mix lightly. Add milk, egg, and melted butter. Mix batter until incorporated but don’t over mix! Heat a medium sized skillet on medium/high heat. Add tablespoon of grape seed oil. Spoon about 1/2 cup of the batter onto the skillet and cook for 1 min. Flip and cook for approximately 1 more minute. Set aside on a plate and continue until the batter is gone. Serve with your favorite toppings.
