Spruce up your Pancakes

Who doesn’t love pancakes in the morning.  It was one of my mother’s staple while growing up – German pancakes, Crepes and my dads favorite: fluffy pancakes topped with bacon, fried eggs and a whole lot of maple syrup (not for everyone).

I find people are afraid to improvise over what the recipes says. With many baked goods, it could potentially FAIL! But with pancakes, you can go for it;  Chocolate Chips, blueberries, strawberries; Heck! add them all if you want. The pancake world is your oyster.

So today, with not much in my fridge, I whipped me up some lemon poppy seed pancakes with fresh strawberries.

 

Lemon Poppy seed is easily one of my favorites. So why not have it for breakfast? I injured my back and had the day off  (Of course, injuries are made a little better with pancakes).  I needed something to eat that wasn’t too difficult to make or keep me on my feet for long. This recipe can whipped up and ready to serve in less than 30 minutes.

You can use any pancake recipe you have and add the flavor of lemon with a tablespoon of poppy seed (I assure you, it wont mess up your pancakes) but if  you would like this delicious recipe, click on the picture above. The better news (other than eating them of course) your friends and/or family will think you slaved away in the kitchen trying to “elevate” your pancakes.  You can add any topping you like, but I enjoy some freshly sliced strawberries coated with a dusting of sugar. #yum
