- 1 Can Black beans rinsed
- 1 Whole Avocado thinly sliced
- 1 Bag Tortilla Chips to your liking
- 1 Sml Package Soft Goat Cheese to your liking
- 1 Bunch Red leaf lettuce
- 1/2 Cup Peas
Spanish rice
- 1 Cup long grain rice
- 1 1/2 Cup chicken broth (for vegetarians replace with water)
- 1/4 to 1/2 Cup Crushed Tomatoes
- 2 Tbsp Tex Mex seasoning
- 2 Tsp Cumin
- 2 Tsp Chili powder
- 1 Pinch Salt and Pepper
- 1-2 Dashes hot sauce to your liking
Salad Dressing
- 1/4 Cup olive oil
- 1 Whole lemon Zest and juice of one whole lemon
- 1/2 Whole garlic clove Minced or Crushed
- 1 Tsp honey
- 1/2 Tsp yellow mustard
- 1 Pinch Salt and Pepper to taste
