Mexican Street Corn
My All time favorite snack. Give me a plate of these, and I’m a happy girl! This fun treat is perfect as a starter or a contribution to a party. Its inexpensive, quick and very easy to make.

Ingredients
- 4 ears corn shucked and halved
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 2 cloves garlic minced
- 1/2 cup Cilantro finely chipped
- 1/2 cup cotija cheese or feta cheese plus extra for topping
- 2 teaspoons lime zest
- 1 teaspoon ancho chilli powder or guajillo pepper plus extra for topping
- 1 tablespoon lime juice

Directions:
On a medium pan lined with tinfoil, place shucked corn in the oven at 350 degrees F until slightly brown and cooked through (about 20 to 30 minutes). Allow the corn to cool slightly (about 5 to 10 minutes).
Meanwhile, in a medium sized bowl, mix lime juice, lime zest, garlic, mayo, sour cream and chili powder until well combined.
Generously brush the corn with the sauce and garnish with cilantro, feta cheese and additional chili powder or Tajin.
