White Chocolate Peanut Butter Cookies with Himalayan Sea Salt

 


I don’t know where I got the whacky idea to create these cookies. I mean, lets face it, peanut butter cookies are a staple and all good on their own. So why screw up a good thing? Well, you can’t really screw up anything with chocolate so why not give it a shot.

Same goes with Sweet and Salty.  There is no better combination. A peanut butter cookie naturally has a bit of both so kicking it up a notch with some extra salty goodness paired with a sweet dip of chocolate would only make for greatness… right?!

Directions:

Preheat oven to 350 degrees.

In a stand mixer, whip brown sugar, white sugar, butter and peanut butter until smooth.  Add one egg at a time until well combined.  Slowly hand mix flour, baking powder, baking soda until it forms a slightly sticky dough.

On a large baking sheet lined with parchment paper, roll peanut butter balls one tablespoon in size (or whatever size you desire) and roll in sugar. Place on baking sheet minimum one inch apart. Using a fork Criss cross the top slightly flattening the cookie.  Bake in oven for about 8 minutes or just slightly golden.

Remove and allow to cool completely.

In a microwavable bowl, heat melting chocolate in the microwave 20 seconds at a time until fully melted.  Use a knife and apply melted chocolate to 1/3 of the cookie.  While chocolate is still warm on the cookie, sprinkle a pinch of salt on the chocolate.  Allow chocolate to cool completely and devour!
